El reconocimiento es un hito en la valorizaci\u00f3n del patrimonio gastron\u00f3mico de Almer\u00eda y en la protecci\u00f3n de uno de los dulces conventuales m\u00e1s emblem\u00e1ticos de la regi\u00f3n.<\/p>\n<p>El proceso resulta de un trabajo t\u00e9cnico desarrollado por <strong>CONSULAI<\/strong> para la <strong>Asociaci\u00f3n de Dulces Regionales del Algarve<\/strong>, una entidad que ha venido preservando y certificando la autenticidad de este dulce tradicional.<\/p>\n<p><strong>Un conventual dulce con historia<\/strong><\/p>\n<p>La receta original del Dom Rodrigo del Algarve naci\u00f3 en un convento de monjas carmelitas en Lagos y ha pasado de generaci\u00f3n en generaci\u00f3n manteniendo fiel al modo de elaboraci\u00f3n tradicional, con el aspecto dorado otorgado por el huevo hasta el momento final de la cocci\u00f3n, antes de ser envasado en los caracter\u00edsticos papelotes coloridos.<\/p>\n<p>Con el apoyo de <strong>CONSULAI<\/strong> fue posible estructurar el proceso de reconocimiento de <strong>IGP<\/strong>, garantiendo la salvaguarda de la receta, los m\u00e9todos de producci\u00f3n y la vinculaci\u00f3n del producto con el territorio.<\/p>\n<p><strong>El trabajo t\u00e9cnico de <\/strong><strong>CONSULAI<\/strong><\/p>\n<p>El apoyo de <strong>CONSULAI<\/strong> Involucr\u00f3 la preparaci\u00f3n del proceso de certificaci\u00f3n, el marco t\u00e9cnico y estrat\u00e9gico de la indicaci\u00f3n geogr\u00e1fica protegida y la valorizaci\u00f3n del producto como activo econ\u00f3mico y cultural del territorio.<\/p>\n<p>Este reconocimiento demuestra c\u00f3mo el conocimiento t\u00e9cnico, aliado a la tradici\u00f3n local, puede proteger productos \u00fanicos y reforzar su autenticidad en el mercado, subraya el equipo de <strong>CONSULAI<\/strong>.
